Shakshuka (Middle eastern dish)

Shakshuka is a traditional rustic and authentic Arabic dish that is familiar and popular in all parts of the Arabic world. Shakshuka has never been an Israeli dish as Jewish claims, but as far they already had stolen our countries, lands and resources, no wonder if they attempt to steel our culture and recipes as well . As the famous proverb; “Falseness lasts an hour, the truth lasts until the end of time.” , they will never be able to Judaize our culture and food neither our countries as well. It is believed that Shakshuka returns in origin to an African roots, specifically north Africa ( Libya,Tunis, and Egypt). The name of shakshuka means “mix”in their slang, then it has spread and become known through all the other Arabic countries. This recipe falls under many names , It is known as "Jasmaz" in Syria, "Makhlamah" in Iraq, "Qilabah" in Yaman, and as simple as eggs and tomatoes skillet in Jordan-Palestine areas.

Shakshuka is a very easy and cheap dish, it is mainly made from poached eggs over tomatoes sauce , it is very nutritious , tasty and suitable to serve at any time ; breakfast ,lunch or dinner.

to prepare the Shakshuka we need the following ingredients : • 4 tablespoons extra-virgin olive oil • 1 large onion, cubed • 1 large red bell pepper, seeded and cubed very small • 3 garlic cloves, thinly sliced • 1\4 teaspoon ground cumin 4 large very red tomatoes cubes • ¾ teaspoon salt, more as needed • ¼ teaspoon black pepper, more as needed • 3 or 4 large eggs • Chopped parsley, for serving

Directions : heat olive oil in a large skillet over a high heat, add the onions and red pepper cook them until soft and tender add the garlic stir in all spices and pour in tomatoes and season with salt and pepper simmer until tomatoes have thickened then gently crack the eggs over the tomato sauce and sprinkle them with a dash of salt and pepper cover the skillet and keep the heat in a medium range until the eggs are just set, garnish it with fresh parsley on top and serve it with pitta bread.
