Baklava Cupcakes

A Delicate honey cupcakes topped and stuffed with Baklava!

Ingredients :

100gm soft butter cut into pieces

3/4 cup sugar

2 large eggs at room temperature

1 tsp vanilla

1 3/4 cup flour

1 1/4 tsp Baking powder

1/4 tsp salt

1/2 cup buttermilk

1/4 cup honey

5-7 baklava crushed and some whole pieces for topping

whipped cream for frosting

Directions :

-heat oven to 160 Celsius and line your cupcake pan with cupcake paper.

-In a medium bowl whisk by a hand-whisker together flour,baking-powder and salt and set aside.

-In a bowl of an electric mixer beat soft butter and sugar until fluffy and light.

-Add eggs-one at a time and keep beating for 6 minutes.

-Add vanilla and honey beat 1 minute.

-Now start adding gradually flour mixture alternating with buttermilk,start and end with flour mixture. Don't over mix in this step!

-Add crushed baklava to the batter and stir only with a spatula.

-Fill cupcakes liners until 3/4 full.

-Bake them in the preheated oven for 30-40 minutes or until a toothpick inserted comes out clean.

-Let cool completely. Pip whipped cream and top with mini baklava, drizzle with honey, and sprinkle pistachios. Bon appétit :)
