Homemade Hummus

Hummus is a Middle eastern Arabic dish, that is usually served as a dip, suitable for a breakfast or dinner,and today I will share with you how to make hummus the traditional way. The creamiest, most authentic hummus bite you will have! :)

BUT who really came up with the idea of this delicious dip made of chickpeas and tahini (sesame paste)?! The Lebanese claim it as their own. But don’t you dare get the people of Jerusalem started on the subject! And according to Wikipedia, the first mention of a recipe resembling hummus, as we know it today, was recorded in an Egyptian cookbook in the 13th century. !

Any way, lets jump in to the recipe!
Homemade Hummus
Ingredients :
-1 1/4 cup of dried chickpeas
-1 teaspoon baking soda( this will make the chickpeas scruff up the skin easily and cook faster in water)
-7 cups water for cooking the chickpeas
-1 cup Tahini paste
-4 Tablespoons of fresh lemon juice
-3 Tablespoons of Yogurt(this will give a light beautiful color for your Hummus)
-8 Tablespoons ice,cold water
-1.5 teaspoon salt or as desired
-good quality olive oil for serving.
Directions :
-Put the dried chickpeas in a large bowl add a suitable amount of cold water to cover them and let the chickpeas soak overnight.
-The next day,drain the soaked chickpeas,place them in a medium saucepan with the baking soda ,stir over high heat for around 2-4 minutes. Add the amount of water and let it boil, cooking chickpeas for around 40 minutes skimming off any foam or skins floating over the water surface (this step is important to get a smooth soft hummus texture), stirring constantly. when the chickpeas are done ,and you can check by trying to put one chickpea between two fingers it will break easily! turn off heat , drain the cooked chickpeas and place in your food processor.
-Process until you get a stiff paste , add Tahini paste , lemon juice, salt and keep processing , add Yogurt while the machine is still running.
-Finally add the ice water and mix for 4 minutes,tell you reach a soft silky texture paste.
-Transfer Hummus to a serving plate , add olive oil and serve with pita bread and some pickles!
