Saudi Samosas with Mung beans filling


A new month and as usual it's time for the monthly challenge in Arabic flavor .

This time the recipe was introduced by the beautiful Amaal Shoomi "host of the month" from Saudi Arabia,she chose to share a Saudi authentic Samosas that are very famous in the gulf region.

The special thing about this samosas is the filling! a mixture of meat beef and Mung beans also known as (moong bean),and it was the first time for me to try such a filling for samosa... actually first time to know about this delicious green whole moong beans! which turns out to have some huge health benefits :)

The photos above were my entry for Saudi samosa, I want to thank Amal for her recipe choice as I found it easy to make and my family loved it :) it's going to be a stable dish on our Iftar table during Ramadan Inshallah.

Saudi Samosas

Ingredients: – 1 pack of Sambosa dough sheets – 4 medium onions, chopped – 1 cup of mung beans – 1 bunch of Leeks – 1/2 a kilo minced meat (optional) – 1 tsp ground black pepper – 2 tsp cumin powder – 2 tsp coriander powder – 2 tsp salt – 2 tsp turmeric powder (optional) Preparation:

– Wash the mung beans and boil in water for about 15 minutes on low heat until its fully cooked. – Wash leeks and cut into thin slices 1-cm thick, set aside. – Heat some oil or ghee and add onions. Keep stirring till it almost turns golden . – Add minced meat and keep stirring until meat is dry and cooked . – Add the mung beans, chopped leek, salt and spices. Cover and let it cook for another 5 minutes. – Stuff each sambosa sheet with one tablespoon of the filling and fold into triangles. – Continue the same technique with the rest of the quantity. – Deep fry sambosas triangles from both sides till they turn golden brown. Serve immediately.
