Traditional Moussaka was the recipe of the month in Arabic Flavour group,this amazing vegetarian dish was presented by the beautiful Mona Abdelmonem (host of the month) from Egypt. And the below photos were my monthly submission :)

There are various versions of Moussaka,but the main two ingredients are always tomatoes and aubergine, and who doesn't like this lovely combination! :) My whole family have enjoyed eating this egyptian Moussaka to last bite!
An Easy simple dish to prepare,considered one of the famous street food in Egypt,or maybe served beside hot pita bread alongside some pickles and home made french fries on breakfast .

Traditional Moussaka Ingredients: 1 kg eggplants 1 kg green pepper 3 chili peppers 500g tomatoes 1 tablespoon minced garlic 2 tablespoons tomato sauce 2 tablespoons ketchup 1/4 cup white vinegar 1 teaspoon sugar Salt Pepper Cumin Coriander Paprika Onion Powder Chili sauce Directions : - Cut the eggplants into medium-sized cubes (Don't peel the eggplants, the peel adds color and flavor). - Put the eggplant cubes in a large colander, sprinkle with salt and set aside for 30 minutes during which you should toss the eggplants gently every 10 minutes. -At the end of the 30 minutes rinse thoroughly then drain completely - Fry the eggplant cubes in vegetable oil till golden brown, drain, set aside. - Cut the pepper into cubes and fry in the oil for a few minutes. - To prepare the sauce: -Add two tablespoons of vegetable oil to a pot and saute the garlic until fragrant - Add tomato sauce, ketchup, chopped tomatoes, sugar with a quarter cup of water. Mix well then cook over medium heat for 10 minutes while stirring occasionally. - Add all spices, the eggplant and pepper and stir. - Turn off the heat, cover the pot and leave it aside for at least 10- 15 minutes to allow the flavors to blend -Add the vinegar and stir. Now your moussaka is ready for serving. - Serve with pita bread and french fries .
