Persian Saffron Rice Pudding (Sholeh Zard)
Sholeh Zard (Saffron rice pudding) is a traditional Persian sweet dish that is made of Basmati rice, sugar,almond, saffron and rosewater. It is garnished with a dash of cinnamon, pistachios and almonds.

Persian saffron Rice Pudding
Ingredients:
2 cups Basmati rice
10 cups water
100g butter
2-4 cups sugar
1/3 cup Almond powder
Prepared saffron water (some saffron threads soaked in 1/3 cup hot water).
2 teaspoons ground cardamom(optional).
1 TableSpoon of rose water
Toppings: • Almonds • Pistachios Coconut Cinnamon
Directions:
-Soak rice for 1 hour in hot water.
-Bring 10 cups of water to a boil, drain rice and it to water. And Remove starch Keep stirring rice to avoid sticking.
-Blend rice once cooked with food processor stick .
-Add butter and sugar, continue stirring and blend again for maximum smoothness.
-Add almond powder,saffron water, and ground cardamom. Stir until evenly mixed.
-Add water if needed to thin the pudding.
-Pour in small bowls and garnish with coconut,almonds and ground pistachios as desired .
